Our dough rests slowly, often for more than 18 hours.
This allows flavour to develop naturally, creating a deeper and more balanced bread.

Sourdough, our way

We use sourdough starter as part of our process.
Not to follow trends, but to bring more depth and character to the bread.

Softness that lasts

We use a technique called tangzhong.
It helps retain moisture, keeping the bread soft for longer without additives.

Made in small batches

Every batch is made with care and attention.
This allows us to stay consistent and respect the process behind each bread.
